Chicken and Honeydew melon salad
6 chicken fillets
8fl oz white wine
leaves from 2 celery stalk
2 celery stalks, finely chopped
4 tbsp parsley
1/4 large honeydew melon, sliced (I cube it)
1/4pt sour cream
grated rind of 1 lemon
4 tbsp lemon juice
2 tsp lemon juice
3 inch piece of ginger root, grated
Poach the chicken fillets in the wine with the celery leaves. Cut the chicken to bite size, add to celery and parsley. Cut up melon. * Blend the ginger mayonnaise, add to the chicken, season with salt and pepper. Garnish with parsley.
*NB Donít over mix the mayonnaise mixture as I find that the sour cream goes sloppy. In fact I tend to use fromage frais instead!
